Chef Russell Ransom
Culinary Department Chair
Russell Ransom has more than 20 years of experience spanning catering, hotels, and restaurants. From Executive Sous Chef at The Daily Dish to Executive Chef at The Mount Pleasant Grille, Russell has contributed to Nashville's thriving culinary scene. He holds an MBA from Strayer University and brings real-world expertise from top establishments including Omni Resort Hotel, helping students learn culinary techniques and industry business practices.
Mark Mabry, MFA, Ed.D
Graphic Design Department Chair
Award-winning designer with 20 years of experience including 10 years as Art Director, plus owner of Mabry Creative. Dr. Mabry holds a Doctorate in Education and Master of Fine Arts in Graphic Design from SCAD. He's a published author and member of the American Advertising Federation Nashville, combining academic expertise with active professional practice.
Mark Fleming B.S.
Illustration Program Director
Creative Director turned entrepreneur who built a client base from a handful to over 300 through his company Creative Avenue. Mark's illustration work spans digital animations for companies to fine art gallery showings. He stays current with industry technology including Adobe Creative Suite and Blender, ensuring students learn cutting-edge techniques.
Tom Stanford B.A.
Photography and Video Programs Director
Former Photography Director at The Tennessean with experience covering NFL, NHL, music festivals, and the 2000 Sydney Olympics. Tom coordinated visual coverage for Nashville's historic 2010 flood, earning the paper a Pulitzer Prize nomination. He's worked on multiple book projects and continues practicing professional photography while teaching the next generation.

A bittersweet announcement from our Nossi Culinary department: Chef Anthony Mandriota is retiring! Chef Anthony was pivotal in the creation and implementation of Nossi College developing a culinary program and has been the department chair since its inception. The two-year curriculum is vast and detailed, with graduates walking away with incredible knowledge of the ins and outs of the culinary industry. We are so grateful to have had him steering the ship here at Nossi.
Onto the sweet part: Chef Russell Ransom @russell.ransom will be taking over the Culinary Department Chair position!! Chef Russ’ experience and portfolio is diverse and his enthusiasm for culinary is unmatched, we are SO lucky to have him in this role.
Congratulations and thank you to both Chef Anthony and Chef Russ for everything! 🍴 👨🍳

“It’s okay to take a break as a creative…we tend to get lost in how busy we work, but do you appreciate how far you’ve come?
Looking back at my work through Nossi, I never fully realized how much I have progressed, but that is because I haven’t taken the time to reflect on what I have created. Our semester is nearing the end and many of us creatives are stressed and burnt out- but where will our art come from if we are too exhausted to create?
Listen to your emotional, physical, and spiritual aspects. Listen to what your body needs. Listen to what your heart is craving.

🖊️🖥️ The project: The REAL Book Cover
In this assignment, students will design an original, reimagined cover for an existing book. The key requirement is that the typography must be original and fully integrated into the overall design — not simply added on — and should demonstrate a thoughtful and creative use of type.
As illustration majors, students will build on their existing skills while focusing on new typographic principles: establishing a clear hierarchy, pairing typefaces effectively, and understanding the anatomy of letterforms. These skills will enhance their ability to present their illustrations to their greatest advantage. @paisley_pen_creative
